Proudly grown by a cooperative of farmers in Sirārakhong, Manipur and sourced for us by our friends Zeinorin & Alan of Hillwild. Picked on the steep mountainous terrain of Manipur by indigenous farmers, these chillies are then slow smoked on bamboo mats for 24 hours, imbuing them with a deep smoky flavor. Many nearby villages have tried to grow the Sirārakhong Hāthei chillies, but something about the terroir of Sirārakhong produces the very best of the best!
